Do the recon and oem cab lights share the same wiring harness?
Does it matter that the recon ones are LED?

Sounds like you may have mismatched bulbs.
Remove and inspect each bulb, and make sure they are all the same type and brand.
While removing the bulb, check the lamp socket for any signs of corrosion and measure the voltage.
Compare the voltage at each socket.
All five should be the same and stable.
If everything checks out well and the issue persists, it could be a load compatibility issue with the factory wiring and the LED lamps.

And it's just the middle three that are doing it now.
It started about a week or two ago (at least I noticed it a week or two ago), with just one this morning.
Three of them were doing it.

It's very odd.
You could try moving the bulbs around to see if the issue follows the bulbs or the sockets.
I would suspect the bulbs, sockets, or wiring.
If it was because of the LED compatibility with the factory wiring, you would think it would have started when they were first installed.
Have you changed any other lamps that may have changed the circuit load?

Nope, I haven't touched them at all yet.
Deciding if I want to get a complete set of OEM cab lights and not mess around with replacing them with Recons.

I’ve run recons before and never had good luck with them.
Either they flicker, get moisture inside them, or leak water into the cab.
I went back to OEMs with LED bulbs and never had any issues.

When doing the replacement, will I need to drop the headliner, or can I take the current ones off, unplug, plug, and mount the new ones? (OEM)

Did your truck come from the factory with OEM cab lights, or was the cab drilled to add the Recons?
If it’s OEM, the new OEM lights should plug and play unless the wire harness has been spliced.
I never dropped my headliner.
