I thought the same thing but could not find an oil temperature sensor.
My limited understanding is that there isn't a dedicated oil temperature sensor.
I'm probably wrong, and I would appreciate some knowledge on this one.

ALLDATA shows the oil temperature sensor is located on the oil filter housing area, but I haven't verified this.

From what I’ve read, the 6.7L doesn’t have a way to read the actual oil temp.
The computer just calculates what it thinks the oil temp is.
If this is true, there isn’t much point in worrying about oil temperature readings on your dash.
It may be inaccurate.
I just keep an eye on coolant temp, trans temp and EGT.
Maybe someone else can chime in about that AllData info.

I got curious about the location of the oil temperature sensor after you asked the question.
I took my camera scope and looked around the oil filter area but found only the oil pressure switch.
I checked the OEM wiring diagram for my 6.7, but the oil temperature sensor isn't showing.
At this point, I believe ALLDATA has led us astray; maybe the 5.9L had one, but not the 6.7.
Maybe the oil temperature is one of those PCM-calculated values like the actual oil pressure.
If anyone knows more about this, please chime in.

Strangely, it wasn’t shown on the wiring diagram either.

Mine has done this exact thing.
Sometimes, when I come up my mountain and work the truck a little, I pull into the driveway, and suddenly, there is a huge oil temperature drop like you have.
I have noticed it sometimes does that when the fans are moving air or even just normal.
Mine have done it since I have owned it, and I have never noticed anything major with it doing that.
It would be nice to understand why it does it though because it's hard to believe it can cool instantly.
The more I look into this oil temperature sensor mystery, the more I believe that the oil temperature and pressure are computer-generated by the PCM.
I have searched the OEM electrical diagrams and parts catalogs, but no oil temperature sensor for RAM 6.7L exists.
Unfortunately, I don’t believe the information published by Mr. Shamrock in his article is correct.
