Most tuning options now come with multiple power levels and shift on the fly tuning. You can have a low power tune for your everyday driving and still have the option to turn it up a bit if you want to. Most people one here have their truck tuned by Double R Diesel and for good reason. His tuning is clean and efficient and his customer service is second to none in the industry.
Delete tuning will disable the EGR so it stops flowing exhaust into the intake. Lots of folks remove the EGR hard parts after this but you not need to remove anything if you don't want to. My EGR has been sitting there doing nothing for almost 5 years and hasn't cause me any problems.
I used just a delete pipe when I did my truck. It was the simplest and cheapest route. Plus the rest of the exhaust was brand new and I couldn't justify spending the money to replace it with more pipe. The factory exhaust pipe is 4" and there is nothing in the section of pipe between the turbo and the canisters. There's no reason to go full turbo back unless you go to a 5" exhaust or if you want to get rid of the muffler/resonator and go full straight pipe.
